Sugar Free and Gluten Free Chocolate Chip Cookies

TOOLS OF THE TRADE

RECIPE
Makes 12-15 Cookies

  • 1.5 cups of Almond Flour

  • 1/2 cup of Gluten Free AP Flour

  • 1/2 Gluten Free Oats

  • 1/2 tsp Xantham Gum (VERY IMPORTANT!! The initial cost is expensive, but it will last a long time)

  • 1/2 tsp Baking Soda

  • 1/4 tsp of salt

  • 6 tbsp of room temperature butter

  • 5 tbsp of sugar substitute (I use Miss Jones Original Blend bettersweet)

  • 5 tbsp of brown sugar substitute (I use pyure ORGANIC BROWN SWEETENER)

  • 1 egg and 1 egg white

  • 1+ tsp vanilla extract

  • At your discretion Sugar Free Chocolate Chips (Lakanto Sugar Free Chocolate Chips)

  • Coconut Flakes (optional)

DIRECTIONS

  • Preheat oven to 350 degrees

  • Mix the dry ingredients together (flours, xantham gum, baking soda and salt)

  • Mix the sugars and butter using an electric hand mixer until a somewhat creamy consistency (it won’t get fully creamy using sugar substitutes).

  • Mix in the egg, egg white and vanilla to the butter and sugar.

  • Add the flour mixture until it comes together

  • Mix in the chocolate chips (and coconut if using) by hand

  • Scoop out dough balls (using an ice cream scoop, if available) onto parchment lined baking tray

  • Flatten round balls a little bit

  • Bake on middle rack for 14 minutes, rotating half way through

  • Remove from oven and allow to cool on pan for 5 minutes before removing to a cooling rack.
